ANNUAL FINANCIAL EXPLANATION <br />Total Annual Sales: $867,000.00 <br />Cost of Goods Explanation <br />• Food Cost: 33% based on industry averages and on desired pricing for menu. <br />• Combined Liquor, Wine, Beer & Beverage Cost: 27% based on industry <br />average and previous experience. <br />Labor Costs: Industry averages run around 30 %. Agate Alley Bistro employs 25 <br />employees and typically has a labor cost between 27% and 30 %. We are projecting <br />hiring between 20 to 25 employees for this venture and plan to hit a 30% labor goal. <br />Operating Supplies: Typically runs 2.5% of total sales as an industry average. <br />Expenses include such items as paper goods (coasters, napkins, straws, toilet paper, <br />paper towels, trash can liners, deli wrap, tin foil, and other paper items used in kitchen <br />and bar). This also includes glassware and china replacement due to breakage, <br />silverware replacement due to loss as well as other bar supplies. <br />Other restaurant supplies include light bulbs, glass racks, trash cans and any item that <br />needs to be replaced from time to time. <br />Repair & Maintenance: Typically runs between 2.5% and 3% as an industry average. <br />Agate Alley Bistro runs at 2.5 %. Such expenses include: <br />- Cleaning products and supplies <br />- Grease trap cleaning, hood vent cleaning, fire suppression system maintenance. <br />- Equipment repair <br />- Building repair and maintenance including doors, locks, plumbing, electrical. <br />Other Operating Expenses: Includes items such as monthly pest control, indoor plant <br />maintenance, POS computer maintenance, shipping expenses. <br />Administrative Expenses: Includes register tape, computer paper, office supplies, <br />subscriptions to newspapers, satellite television, internet, etc. <br />Linen & Laundry: Bar towels, door mats, aprons, kitchen uniforms, linens for catering <br />that are services by Alsco on a weekly basis. <br />Comps: Comps are sales which are rung into the POS system but not collected for and <br />are comprised of public or employee relations. <br />Utilities: Monthly bills for telephone, natural gas, electricity and water. These figures <br />based on Agate Alley Bistro figures. <br />
